Yesterday, I made some chicken masala, and I ensured that I made plenty extra so that I could try something new on a round-two recipe. Man, am I glad I did!
Chicken Salad
To make this, I shredded the 2 leftover chicken thighs/drumsticks (to make things easy, I used kitchen scissors to cut the chicken into small pieces once off the bone). To that, I added about 1/2 cup Greek yogurt and about 2 tsp coriander chutney . Mixed it all together and you have a delicious chicken salad!
You can simply eat this as is, or put it in a wrap. Since we had extra Poppads, I decided to wrap the chicken salad in them and then fry them to crisp them up! I fried them face-down first to seal them and then flipped them and let them bubble up.
Delicious with tamarind chutney ☺️
