The other day, I found myself craving buffalo wings. As much as I love wings, sometimes I’m not wanting to commit to the greasiness that comes with them. To satisfy my craving, I decided to try and create a healthy alternative that would give me the flavors I love.
I made healthy substitutions where I could, and the final product was really tasty! I made a bunch and had some as a cold dip with celery as a snack the next day.
Buffalo Chicken Salad Sandwich
Ingredients
1 cup shredded chicken (I used a can of chicken breast because I was pressed for time… Worked out well!)
1/4 cup Greek yogurt
1/2 tbsp ranch seasoning (comes in a packet!)
1 tbsp light whipped cream cheese
1 tsp olive oil
1-2 tbsp buffalo sauce (this can be pretty high in sodium, so I found an alternative, healthier recipe here! http://ashleyvillandry.blogspot.com/2013/10/homemade-buffalo-sauce.html?m=1 )
1/4 cup finely chopped celery
2 tbsp blue cheese crumbles (optional- I love blue cheese but I know not everyone does!)
2 slices of wheat bread
Directions
Mix all of the ingredients together in a bowl! (Except for the bread, of course)
SO EASY! 😍
And then put the chicken salad on the bread- I like to toast up my bread first so I get a bit of a crunch in my sandwich!
